Head Sushi Chef

For our Client Fine dining Japanese & Peruvian cuisine Restaurant in Warsaw, Poland we are looking for a Head Sushi chef to manage a Team of 6 sushi chefs.
The Head Sushi chef will have:
- Full responsibility for the operation of the Sushi kitchen and will assist the Executive Chef in the smooth, safe and efficient management and running of the entire kitchen and all aspects affiliated to such.
- Regularly order all required products from a range of suppliers (quantities in line with business demand) and prepares sushi to a high standard.
- Maintain a high level of cleanliness, cleans any part of the sushi kitchen and adjoining areas as and when required to do so. Assists in the running of the HACCP system, monitors paperwork/internal audits/temperature and cleaning monitor logs. Follows all HACCP/food hygiene/health and safety (Rules, regulations and guidelines).
- Supervise, train and monitor all of the sushi team on food quality and all aspects of the teams performance.
- As a daily routine continuously train the sushi team on all aspects of food quality/food safety/hygiene.
- Proactively seek out potential problems, creates plans and implements systems and controls to prevent any potential drop of quality standards.
- Communicate well with management team and restaurant managers and with other departments whenever necessary.
- Monitor and communicate regarding any maintenance and repair issues in the kitchen.
- Specialist with sashimi, maki and nigiri style sushi, showcasing intricate knife skills and understanding of contemporary presentation.
- Ability to deliver well in a luxury high volume operation, and should be comfortable delivering the same levels of quality sushi in a busy fast-paced restaurant.
- Cutting and preparing different types of fish.
- Training staff under our Restaurant standards.
- Able to organize, rotas, holidays for sushi bar and follow all the HR process for new hires.
- Responsible for ensuring routine cleaning, set up and breakdown of sushi bar is carried out within legal regulations. This includes all preparation required to run sushi station efficiently and smoothly.
- Greet guests in a professional, friendly and courteous manner.
- Informs guests of specials and menu changes, allergies and makes suggestions and answers questions regarding sushi menu.
- Able to work with events, menu developments and work apart with strong knowledge of allergens.
- Highly impressive career background, having built their expert understanding of sushi within only the most revered and regarded restaurants around the globe.
- Alongside operational culinary talent, there is also a requirement to take pride and ownership of training a team of sushi chefs to exceptionally high standards.
- Control stock and wastage, report defective equipment, sign off on HACCP, work closely and report to the executive chef.
OTHER DUTIES
- All Associates are required to fully comply with hotel and departmental rules, regulations and policies for the safe, secure, effective and environmentally friendly operation of the hotel facilities. Examples include, but are not limited to lost and found procedures, emergency procedures, recycling efforts, etc.
- Attend and participate in all hotel and/or departmental meetings, training sessions and other information meetings.
- Regular attendance in conformance with hotels standards is essential to the successful performance of this position.
- Comply with hotel grooming standards for both uniformed and non-uniformed associates.
- Comply with hotel service and behavioral standards towards our guests, vendors and fellow colleagues, including, but not limited to ensuring proper phone etiquette, courteous and respectful behavior and maintaining a friendly and positive attitude.
- Perform all other duties as directed by management that are consistent with the policies and procedures of the hotel.
